Raw Bounty Donuts

If you read my interview last month, you will know I have had a life long love affair with donuts. Cinnamon ones have always been my favourite, I will take those over iced ones any day. But alas, along with so many others, donuts are long gone from my list of treats as the sugar and gluten just isn't worth the pain. 

But raw donuts, now there's a treat I can, and do, eat! 

As it is National Donut Day today, what better way to celebrate than with some healthy donuts! I think you could probably pick any day in the calendar and it's National or International something. We seem to enjoy celebrating the simple things like peanut butter, brownies, tacos, beer - yes there is an international beer day! But when I heard it was National Donut Day today I thought if there's ever a day to finally post my Raw Bounty Donuts then it's today! 

So simple to make, so delicious to eat

if you haven't tried a raw donut yet you are really missing out. All you need is a silicon donut tray which are easy enough to find, they make turning out the donuts much easier. I have used almond meal, although you can substitute this for cashew or macadamia meal and they take minutes to make. The longest part is dipping them in chocolate, but I have also drizzled chocolate over them before if I don't have the time or energy to dip them! 

Please try and use organic desiccated coconut to avoid extra sulphites! 

 

Ingredients:

1 1/2 cups organic desiccated coconut

1 cup almond meal

1/4 cup Loving Earth coconut paste 

1/4 cup coconut flour

4 dates

2 tbsp coconut oil

1 tbsp maple syrup (or your choice of sweetener)

Loving Earth Dark Chocolate and desiccated coconut to top

Method:

Place all ingredients into your food processor except the dates and blitz for a minute to combine

Add dates one at a time and blend until the mix is sticky and holds together. More dates may be necessary

Press into your donut pan and refrigerate until firm - this can also be done in the freezer if you are impatient!

Melt your chocolate and dip the donuts in, place on a lined tray and sprinkle with coconut. Allow to set before demolishing!
